Bean Soup (Vegan)
 
Ingredients
  • 3Tbsp Vegetable oil
  • 2 Medium onions, cubed
  • 5 Garlic cloves, chopped
  • 1 Box Champignon mushroom (400 grams), sliced
  • 1 Smoked Sausage, cut in bite sized cubes (Optional)
  • 1 Small tomato paste (140 grams)
  • 2.5 Tbsp Cumin
  • 3 Cans white beans in tomato sauce (1080 grams)
  • 5½ cups water (1400ml)
  • 2 Tbsp Mushroom bouillon powder/cube (Optional)
  • 1 Tbsp Chicken bouillon powder/cube (Optional)
  • Salt & Pepper
  • 7 Medium red potatoes, cut into bite-sized cubes
Instructions
  1. In a large sauce pan on medium high heat, saute onions until soft. Add garlic and cook for a few minutes longer
  2. Add mushrooms and saute until liquids are cooked out (5 minutes)
  3. If using sausage, add cubes at this step and saute for 5 more minutes
  4. Add tomato paste, cumin and saute for 1 minute, stirring to allowing the flavors to release
  5. Add the white beans, water and bouillon powder, stir well and bring to a boil
  6. Add potato cubes, salt and pepper and bring heat down to medium. Simmer until potatoes are soft and fully cooked, about 30 minutes.
