Honey Cake
Serves: Makes 2x English Cake Pans
 
Ingredients
  • 1 strong cup of dark tea (cooled) (240ml)
  • ¾ Cups oil (180ml)
  • 1 Cup Honey (240ml)
  • 3 Eggs
  • 1 Tsp vanilla extract
  • 2¼ cups all-purpose flour (288grams)
  • ¾ Cup sugar (96grams)
  • 1½ Tsp baking powder
  • 1½ Tsp baking soda
  • 1 Tsp Cinnamon
  • 1½ Cups walnuts (optional) (220grams)
Instructions
  1. Preheat oven to 160 degrees and prepare two English cake pans by greasing and dusting with flour
  2. Mix all the wet ingredients: tea, oil, honey, eggs, vanilla extract
  3. Add dry ingredients: flour, sugar, baking powder, baking soda, cinnamon and mix until there are no lumps. If using walnuts, add 1 cup at this stage and mix in.
  4. Divide batter between the pans and place in the oven for about 30 minutes. Cakes are ready when a toothpick inserted comes out almost clean, a few crumbles are good to indicate the cake is moist inside
  5. Cool on a cooling rack and release from the pan. Serve at room temperature. (Cake is even better the following day, seal well.
