Preheat oven to 160 degrees and prepare two English cake pans by greasing and dusting with flour
Mix all the wet ingredients: tea, oil, honey, eggs, vanilla extract
Add dry ingredients: flour, sugar, baking powder, baking soda, cinnamon and mix until there are no lumps. If using walnuts, add 1 cup at this stage and mix in.
Divide batter between the pans and place in the oven for about 30 minutes. Cakes are ready when a toothpick inserted comes out almost clean, a few crumbles are good to indicate the cake is moist inside
Cool on a cooling rack and release from the pan. Serve at room temperature. (Cake is even better the following day, seal well.
